Don't use SAP, if you need help on that question.

The answer to the question:
two SAP instances cannot occupy the same memory space at the same time

The memory segment used by SAP instance is calculated from System Number therefore it implies the following:
  1. if each SAP instance has its own dedicated box (physical or virtual) then you can install them with the default SysNo 00.
  2. as soon as you have some kind of application level cluster solution then it is advisable to have distinct system numbers. This way you can vary the SAP instances between boxes with minimal risk.

The (1) was the SAPs philosophy for long years in the past. It assumes that you can increase SAP Instance capacity by adding CPU and memory into the box.
The (2) is a relatively new design that was introduced with Adaptive Computing technology. It has no real disadvantage that's why it is widely used regardless of topology.

PS: installation of a SAP system is not a big deal. Anybody can do it with the install guide. Troubles come when you have to implement your business processes or design the HA solution.
If you do not trust in the abilities of the project then invite an other company for quality check as soon as possible.
