How to change time on a terminated employee

Good afternoon,
I am new to this group and fairly new to SAP. We have been on SAP only a short time, and have had minimal instruction. Right now we are faced with how to reverse checks issued in error to terminated employees. For instance, an employee not being terminated in a timely manner was paid holiday time.
We need to reverse this check, but I was told that if we reverse without correcting the time first, it will come back through to pay again. However, when we go into CAT2 to try to correct/delete the time, it won't let us because the employee is terminated.
Does anyone know of a set of step by step instructions for getting this done? Right here at the end of the year, time is of the essence.
I'd be grateful for any assistance!!!
